NEDERBURG 56 HUNDRED CABERNERT SAUVIGNON

This is a great South African wine brewed with talent, passion and precision giving it its distinctively unique taste. It is made of grapes entirely. Nederburg is known for its skill in combining great fruits and is a favorite from all over the world.
Among its achievements are;
· The Paarl winery has attained an impressive five-star ratings for three wines. This happened in the 2012 edition of Platter’s South African Wine Guide. This is the highest number achieved by any winery or wine producer.

In 2011,Nederburg was chosen as Platter’s Winery of the Year, with five wines across the multi-tiered range earning five-star ratings. The winery brought home six gold and six best-in class ratings from the 2011 International Wine & Spirit Competition (IWSC) in London and won two double gold and nine gold medals at the 2011 Veritas Awards, South Africa’s National Wine Show.






The 56HUNDRED range:

This was started by a winemaster in 1791 and he invested 5600 guilders to brew a drink with a quality lasting taste. The grapes are sourced from various vineyards along the Western Cape, South Africa. The vines are situated at altitudes of between 50 m and 300 m above sea level and grow in a variety of soil types ranging from sandy to decomposed granite and alluvial soils. Some vineyards received supplementary irrigation from a micro-irrigation system while
others grow under dry land conditions. The yields are an impressive 10 tons per hectare.




The process.

The grapes were harvested by hand and machine at22º to 24º Balling from mid-February until the end of March. The fruit was crushed and fermented on the skins in temperature-controlled stainless steel tanks at temperatures of 24ºC to 26ºC. The relatively short period of fermentation on the skins combined with gentle pump-overs and regular rack-and-returns ensured the extraction of sufficient flavour and colour compounds together with soft and smooth tannins. The wine was carefully oaked for a period of five months.





The wine
This is a great wine made by Wilhelm Pienaar. It has a deep red /ruby red colour . The taste is that of lovely aromas of ripe berries, currants and dark violets with nuances of dark chocolate and oak in the background. The palate is a generous and mouth-filling wine showing ripe fruit and delicate oak spice flavours, soft tannins and a lingering aftertaste. This wine is best enjoyed with the following foods pâtés, burgers, grills, roasts and casseroles as well as matured cheeses.





It has a residual sugar of 4,70 grams/litre and the alcohol percentage is 13,66 % . Acidity is 5,52 grams/litre with a ph of 3,56.
